Fatty acids in generals and Omega-3 fatty acids in particular are essential nutrient fatty acids that are the most deficient in our food supply. They are essential for many functions including maintaining blood viscosity (preventing platelets from aggregating), maintaining normal cholesterol and triglyceride levels, lubricating joints, ligaments and articulating surfaces, maintaining of normal brain and neurotransmitter function and maintaining the integrity of cell membranes (omega 6 fatty acid phospholipids). A recent survey by the Food Safety by the Food Safety
Authority of Ireland examined a range of popular European
fish oil capsules for the presence of dioxins. Alarmingly,
one of the products tested showed the dioxin level to be
five times the maximum limit. Eskimo-3 stable fish
oil was found to have the lowest levels of contaminants,
which included dioxins and dioxin-like PCB's.
Concentration of heavy metal contaminants such as
cadmium and mercury was below detection levels in
Eskimo-3. Swedish researchers observed that,
although Eskimos consume large amounts of fat, they have
a relatively low incidence of the diseases associated
with high fat diets. Eskimo-3 provides valuable doses
of stable omega-3 fatty acids EPA & DHA, which are
thought to be partly responsible for this phenomenon.
